Fate/stay night REMASTERED Mapo Tofu Recipe
Ingredients
- 450 g of tofu
- 3 tablespoons of groundnut oil
- 100 g of minced pork
- 2 tablespoons Szechuan chili bean paste
- 1½ tbsp fermented black beans, rinsed (optional, available from souschef.co.uk)
- 2 cm piece of ginger, peeled and finely chopped
- 3 cloves of garlic, chopped
- 200 ml light chicken stock or water
- 1 teaspoon of corn flour, mixed with 1 teaspoon of water
- 6 spring onions, sliced diagonally
- 1 tablespoon Szechuan chili oil (optional)
- ½ teaspoon Szechuan pepper, crushed
Boiled white rice, to serve
Method
STEP 1Before you start cooking, prepare all the ingredients and put them in bowls. Drain the tofu and cut it into 1.5 cm cubes. Place in a bowl and cover with very hot water. Leave it while you attend to everything else.
STEP 2
Heat a wok and pour groundnut oil into it. Turn it hot and fry the pork until crispy. Remove with a slotted spoon but leave the oil.
STEP 3
Add the bean paste and cook, stirring, for a few minutes until fragrant, then add the black beans, ginger, and garlic. Cook, stirring, for about a minute, then add the stock and allow to bubble.
STEP 4
Mix the cornmeal and water into the mixture in the wok, drain the tofu, and mix it into the sauce. Add spring onion and chop.
STEP 5
Add chili oil, if using, and sprinkle with Szechuan peppercorns. The sauce should not need a seasoning of salt as many of the ingredients are already salty. Served with boiled white rice.
